4 and a half years ago on a roadtrip around Tuscany we ate at the delicious Pane e Vino in the stunning hilltop medieval town of Cortona. We met and got chatting to the owner who, not only keeps a natural wine list of tiny producers but, had started to make his own wines from just 0.7 hectares of Sangiovese vines. DODO is fermented in wooden cats with indigenous yeasts, aged in barrel for a year with no fining or filtering adding minimal sulphites (19mg/L) He makes just 600 bottles a year all in 1L bottles because in his words, “I wouldn’t want to drink any less”. We asked if we could buy a bottle and take it back to the UK. Last night we drank it with a porterhouse.
