AOC Languedoc, often referred to as the worlds biggest vineyard, stretches across from the Pyrenees to Provence across a vast section of the south of France. Whilst home to both simple table wine and world class quality wines, it is above all famous for it’s variety of grapes, of terroirs, of climates and consequently it’s blended wines. Across the 150miles of vines climates and soils range greatly; from a truly cool, maritime climate to warmer and drier continental climates affected by mountains and strong winds.

The vines are situated around Magalas, in the heart of the Côtes de Thongue, with an average altitude of 110 meters on different exposures and soils. The Taix family produce 4 white wines and 7 red wines from 11 different varieties. Merlot, Cabernet and Chardonnay are planted on sandy marls, while the Syrah, Grenache and Carignan are planted on sandstone. A new state-of-the-art cellar, built on the terraces overlooking Malaga, has been design to create optimum conditions for winemaking, including temperature controls, an adapted fermentation room and a barrel cellar, with a focus on gravity and circulation of air throughout. All the wines are vinified in cement under controlled temperatures, with the reds being aged in barrel for 12-18 months depending on the vintage, and the whites aged in vats with regular stirring on the lees.

Tasting note: Bright; rich citrus nose of warm lemon; grapefuit and pears. The palate is super soft and gentle with loads of pineapple; warm citrus; yellow pear and yellow apple. Lush and a little creamy; there's plenty of acidity and a really long creamy pear finish that goes on and on.
Winemaking Detail: Manual harvest followed by hand selection, de-stemming and then pressed under inert gas. Each grape variety is vinified separately. After a light settling, fermentation and vinification takes place under controlled temperatures of around 18°C to obtain more fruit forward characters.
