Bordeaux is one of the most celebrated and highly-regarded wine regions, with the classification of 1855 solidifying the wines as some of the best in the world. Bordeaux is broken down into 2 main categories - the left and right bank of the Gironde, with many appellations and sub-appellations in those areas. The wines on the left bank are predominantly Cabernet Sauvignon blended with Merlot. The right bank is the opposite. White Bordeaux, found mainly towards the South of the region, is made up of mostly Sauvignon Blanc and Semillon. Bordeaux ranges from fantastic value, entry level wines all the way to First Growth Grand Crus that are amongst the most sought after wines in the world.

Before settling in Saint-Morillon, Bordeaux, in 2019, Anne Buiatti and her husband Grégoire tended a stunning Syrah vineyard on shale soils, which they managed to acquire before their move. Today, they cultivate 2 hectares of Cabernet Sauvignon and Merlot in Bordeaux alongside their 2 hectares of Syrah in Roussillon. Their approach is deeply rooted in minimal intervention and a steadfast commitment to organic and biodynamic principles. Certified by Demeter, they nourish the soils with composts, herbal teas, and silica, fostering biodiversity with grazing ewes, beehives, orchards, and vegetable gardens. All grapes are hand-harvested and vinified back in Bordeaux. Anne’s philosophy is to guide the wines naturally—fermenting with wild yeasts, avoiding fining or filtration, and forgoing sulphur—while maintaining precision and consistency. Allumée undergoes a 60-day maceration in clay amphorae before aging for four months in Austrian oak. Bouffonne and Donna age for 12 months in a mix of French oak and 750L amphorae, with Donna resting an additional three years in bottle before release.

Tasting note: Serious, textured orange wine with a zippy grapefruit juice acidity. Beeswax and floral notes from the terror. Peach, lemon verbena, soft lemon and orange on the palate. Fantastic structure ans acutely balanced.
Winemaking Detail: Grapes are hand picked, carefully selected and destemmed into wicker baskets, then they are hand crushed. Maceration for 2 months in clay amphore and fermentation with wild native yeasts. No fining, no filter and no added sulphites.
