Bordeaux is one of the most celebrated and highly-regarded wine regions, with the classification of 1855 solidifying the wines as some of the best in the world. Bordeaux is broken down into 2 main categories - the left and right bank of the Gironde, with many appellations and sub-appellations in those areas. The wines on the left bank are predominantly Cabernet Sauvignon blended with Merlot. The right bank is the opposite. White Bordeaux, found mainly towards the South of the region, is made up of mostly Sauvignon Blanc and Semillon. Bordeaux ranges from fantastic value, entry level wines all the way to First Growth Grand Crus that are amongst the most sought after wines in the world.

Anne Buiatti has been based in the Graves town of St. Morillon since 2019. Here she has 2 hectares of vines (along with another two in the Roussillon (Calce) across which she makes four different cuvées. Before settling in Bordeaux in recent years her and her husband Grégoire looked after a magnificent plot of Syrah on shale which they were able to buy before their move. Her vines in Bordeaux, as in Roussillon, are managed using a very handoff approach and without the use of any chemicals. They use composts, herbal teas, silica to invigorate and revitalise the soils gaining Demeter certification. Here she continues to develop the biodiversity; introducing ewes for pasture in the vineyards, beehives, orchards and vegetables. All grapes are harvested by hand and vinified back at the cellar in St Morillon. Whilst she hardly intervenes in the winemaking - fermenting with wild yeasts, neither fining nor filtering and adding no SO2 – her goal is to make controlled, precise wines without any deviation and variation.

Tasting note: Super-concentrated; dense red and black fruit; with sweet spice and raspberry jam and a touch of bitter chocolate. The palate has a touch of upfront eucalyptus and aniseed; some leathery; savoury notes and plenty of baked red and black forest fruit. The tannins and morish and rich; enveloping a long finish; with notes of stollen and sweet spice. Long; dense and very serious.
Winemaking Detail: Hand harvested grapes, from a mix of medium to old vines. Spontaneous fermentation in concrete and conical tanks. Aged for 1 year in a mix of old 300L oak and 750L amhorae. Bottled without fining, filtration or the addition of any sulphites. Wines are all certified Demeter, Organic and Vin Methode Nature.
