The winery is located in the southeast of the Iberian Peninsula, in Jumilla, in the region of Murcia, Spain. The plots are located in the Fountain of the Partridges, La Cañada de Albatana and the Termino de Arriba in the north of Jumilla. The climate is continental, influenced by the Mediterranean sea. It is a sunny and arid climate, with more than 300 days of sunshine per year and limited rainfall, only about 300 liters per square meter per year. The summers are very hot, and winters are cold.

Established as recently as 2018, These incredibly fresh wines come from the hand of Maria Jover, a 28 year old winemaker that has transferred Parajes del Valle's wines with her modern views to wine making. The organic Monastrell grapes come from very old vines (20-40 years old), organic, maintained from the old system of “Terraje". The driving force of this winery is to be able to maintain the old system of the “Terraje” that consist on renting the vineyard to the farmers: they take care of the good quality of the vines and gives back a 7% of the production to the land owner. Almost all 80-90 year old vines in Jumilla are maintained that way, but unfortunately, nowadays the owners of the land want to change the system to a more productive irrigated vineyard. The goal of the cellar is to maintain the old vines of the “Terraje” system by paying the grapes a higher price, and therefore maintaining the higher quality those old vines yield.

Tasting note: Sweet; aged; ripe berries; plums and cherries on the nose with a smack of cocoa at the end. Fresh upfront with a touch of sour fruit; followed by cooked black cherry and damson. Grape skins and notes of cherry liquor. Touch of eucalyptus freshness towards the end; then beautifully; gentle powdery tannins to finish. Long and refined.
Winemaking Detail: Manual harvest for their oldest low-yielding vines (30-40 years old). Grapes are pressed in stainless steel tanks to start their fermentation, before being transferred to 5000 litre oak foudres to complete full malolactic fermentation. No added sulphur at bottling.
