Tasting note: The initial nose is direct and intense; ripe red fruits; currants; blackberries and dark cherries. Given a little time it will open to aniseed; menthol and black pepper with licorice and aromative Medierranean herbs like thyme; rosemary and lavender. The palate is ripe and bright; as well as creamy and smooth with the red fruit countered by balsamic notes, mountain herbs and a gnetle spicy acidity.
Winemaking Detail: Grapes all come from a single vineyard, Teixar. Organic and Biodynamic viticulture on 80 year old vines, with a limited production of 400 grams per plant. Hand harvested on a number of occasions to ensure optimal ripeness, days or even weeks apart. Low pressure hydraulic pressing for minimal extraction. Fermentation occurs naturally on wild yeast at around 25 to 30 degrees with macerattion on their skins lasting a maximum of a week.
