Story

Nestled above the River Serein in the village of Poilly-sur-Serein, Domaine des Pérégrins is one of the most exciting new voices to emerge from the Chablis appellation. The estate has been in the Moreau family for generations. Laurent Moreau planted the first vines here in 1982, when the village was formally welcomed into the Chablis appellation after centuries without. But it is his daughter Éléonore who has transformed it into something truly special. Taking the reins in 2016, she brought with her an uncompromising vision: organic farming, painstaking cellar work, and a refusal to rush. The domaine's name - pérégrins, meaning wayfarers or wanderers - speaks to the restless spirit that drives her. The estate covers just over 14 hectares on the clay-limestone hillsides of Poilly-sur-Serein, in the quieter south-eastern reaches of the appellation. Farming has been certified organic since 2022, with harvesting done largely by hand, no herbicides or chemical fertilisers, and careful canopy management to coax healthy, concentrated fruit. In the cellar, Éléonore lets nature lead: fermentations are spontaneous, and the wines age for an extraordinary 12 to 18 months on the lees in stainless steel, far longer than the Chablis norm. The result is wines of rare texture, precision and depth.

Winemaking

Hand-harvested fruit from the Vaucorme parcel is fermented with natural yeasts and vinified traditionally in stainless steel. The wine is aged for 22 months on fine lees, building texture and complexity while preserving its linear, mineral core. No oak is used, allowing the site’s limestone soils and the vintage’s character to express themselves with clarity and precision.

Tasting Notes

A more structured, mineral style, with lemon peel, orchard fruit and subtle floral notes. Despite the warm vintage, it remains taut and focused, with impressive depth and a long, saline, finely textured finish.

Food Pairing

Ideal with seafood starters, scallops or grilled fish. Also pairs well with veal dishes or creamy poultry, where its acidity balances richness and enhances flavour.

About the region

Burgundy is a long and complex strip of regions, sub-regions, villages and vineyards stretching from Dijon in the north to Macon in the south. It producers, along with perhaps one or two other regions, the most sought after wines in the word sometimes selling for tens of thousands of pounds. But for a few exceptions the reds are Pinot Noir and the whites are Chardonnay, but it is the micro-climate, soils and winemaking that makes the wine so interesting, unique and varied in style and quality. It is the most terroir driven region of France and with its continental climate that varies much from year to year, vintage variation in the wines is everything.
