DO Getariako Txakolina, located on the coast of the Bay of Biscay in and around the small fishing towns of Getaria and Zarautz, is perhaps the most notable Basque DO. Renowned for its iconic, spritzy, fresh and young white wine Txakoli, it is particularly loved in the nearby gastronomic mecca of San Sebastian. Here, as is customary int he region it is served with local Basque Pintxos (tapas) with fish, fried morcels and anchovies featuring regularly. It's a small Spanish region with only 17 wineries registered with the DO. The vineyards, which run right up to the sea front are protected from the cold northerly winds by the hills. With one of the highest rainfalls of all the Spanish DO's hail is a serious risk for the grapes.

This magnificent work is in charge of a team in which the young Ion, Mikel and Egoitz Zapiain stand out, who have taken over from their predecessors, from parents to children. The passion for cider comes from Migueltxo, one of the first enologists in the world of Basque cider, and Egoitz is one of the main heirs not only of the surname but also of knowledge, reinforced with studies, research and experimentation. Their ice cider has been awarded in many competitions around the world and it’s the result of innovation and diversification.

Tasting note: Hazy; golden blonde in colour with a delicate head. Dry; salty; delicate orchard apples with soft bubbles. Apple skins and core on the palate; tart juiciness with a Champagne-like mustiness. Good acidity with a sharp but fresh apple finish.
Winemaking Detail: Manual selection to ensure only the highest quality apples are used. Pneumatic pressed followed by 24 hours of decantation. Fermented at a controlled temperature in stainless steel tanks, and slow malolactic fermentation.
